血红素(heme)是一类含有铁离子的卟啉化合物。 它除了在血红蛋白中负责结合氧气外,还是肌红蛋白、细胞色素、细胞色素P450、过氧化氢酶、过氧化物酶等多种蛋白的辅因子,并且参与调控基因表达、 miRNA加工、昼夜节律等过程。
针对乳酸乳球菌 (Lactococcus lactis)传统发酵代谢效率低、需氧培养成本高的问题,研究人员提出电发酵技术,通过电极介导的厌氧呼吸替代有氧代谢。该研究实现了>60%的菌体产量提升和>90%的冷却成本降低,为食品工业提供了无需血红素 (heme)和氧气的可持续解决方案,相关成果发表于《TRENDS in Biotechnology》。
